"Eleve Sous Bois" ("raised under wood") is the French designation for a rhum that has spent time in oak but does not yet qualify for the Vieux (aged rhum) designation, which requires a minimum of 12 months. J.M Gold sits exactly at that threshold: 12 months in re-charred bourbon barrels. This is the shortest oak maturation in the J.M lineup, and it was designed to achieve a specific effect: demonstrate the brilliance of J.M's volcanic terroir with just enough wood alchemy to add warmth, vanilla, and viscosity without obscuring the raw sugarcane character.

The Habitation Bellevue estate at Macouba, on Martinique's northernmost tip at the base of an active volcano, produces sugarcane with exceptional quality from the nutrient-rich lava soils. The Creole copper column still that J.M uses preserves that terroir character through distillation. In Gold, you taste what 12 months of re-charred bourbon barrel contact does to that exceptional base spirit: it warms, softens, and adds structure while leaving the cane's voice fully audible.
